These easy alien cupcakes with eyes are a huge hit with kids and adults alike.

Easy Alien Cupcakes with Eyes on a Stalk

These alien cupcakes are perfect for Halloween, or any time you want a fun themed cupcake.

The cupcakes themselves are a delectable homemade vanilla, topped with frosting, colored coconut and alien eyes made from toothpick stalks and gummy eyeballs.

Alien cupcakes should be green, of course, but we’ve also made some red alien cupcakes as well, just for fun.

Here’s what you’ll need to make the alien cupcakes

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, room temp
  • 1 large egg
  • 2 large egg whites
  • 1/2 teaspoon vanilla
  • 1/3 cup buttermilk

Here’s what you’ll need to make the frosting and decorations

  • 4 cups powdered sugar
  • 1 cup unsalted butter, room temp
  • 4 to 6 tablespoons of heavy whipping cream
  • Red & green gel food coloring
  • Shredded coconut
  • Red & green gum drops (on Amazon here)
  • Red & green colored toothpicks
  • Candy eyes (available on Amazon here)

How to make the alien cupcakes

  1. Preheat oven to 350 degrees. Line cupcake pan with paper liners.
  2. Sift flour, baking powder, baking soda and salt in a medium bowl. Sit aside.
  3. Using an electric stand mixer cream the butter and sugar.
  4. Add whole egg, and egg whites. Add the vanilla.
  5. Add creamed egg/butter mixture, and buttermilk, to dry ingredients. Mix until just combined.
  6. Scoop the batter into the paper lined cupcake pan until each tin is 3/4 filled.
  7. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean. 
  8. Cool in cupcake pan for 10 minutes. Remove cupcakes from pan and place each on a wire rack until completely cooled.

How to make the frosting

  1. Mix butter and powdered sugar until smooth and looks creamy.
  2. Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready. If not, add more powdered sugar, 1/2 cup at a time, mixing well after each addition.
  3. Divide the frosting equally into two bowls. In one bowl, add the red gel food coloring, mixing well.
  4. In second bowl, add several drop of the green gel food coloring, mixing well.
  5. Scoop the frosting into the pastry bag with a large tip.
  6. Frost the cupcake from the outer edge to the center of the cupcake.

How to color the coconut

  1. Divide coconut in half and put each half in a Ziploc bag.
  2. Add red gel food coloring to one bag and mix. Leave in about 30 minutes, and dab with paper towels to remove excess.
  3. Repeat step 3 with green food coloring.

How to make the stalk eyes for cupcakes

  1. Stick the green toothpicks through the middle of the green gumdrops.
  2. Stick the red toothpicks through the middle of the red gumdrops.
  3. Apply two small dots of green frosting to the green gum candy, and stick the candy eyes to each frosting dots. Set aside to dry.
  4. Apply two small dots of red frosting to the red gum candy, and stick the candy eyes to each frosting dots. Set aside to dry.

Add coconut and eyes to frosted cupcakes

  1. Add the green tinted coconut to the green frosted cupcakes. Add the green toothpick gumdrop eyes on top of the cupcake.
  2. Add the red tinted coconut to the red frosted cupcake. Add the red toothpick gumdrop eyes on top of each of the cupcakes.
