Cool days are the perfect time for enjoying winter squash. I’m a huge fan of the traditional squashes like butternut, acorn, spaghetti, and even pumpkin. Winter squash are perfect for making delicious, homemade squash recipes, because they’re at their peak in cool weather.

Combined with savory onion and a creamy base, this vegan delicata squash soup is the perfect mixture of savory and sweet flavors. We kept it simple in this recipe, to let the flavor of the roasted delicata squash really shine.

Baked delicata squash is one of my new favorites. It’s a lovely flavor that reminds me a lot of sweet potatoes, or butternut squash.

Because it’s made without rich cream or butter, this delicata squash soup is healthy and lower calorie. I’m absolutely blown away that it’s 100% vegan and gluten free!

I really love that this soup has a simple list of ingredients, with minimal cutting and chopping. It does take a bit of time to let the delicata squash roast in the oven, but it’s well worth the effort, since the roasted squash gives this soup a lovely, complex flavor.

A lot of winter squash soup pumpkin or apple. Personally, I find these overly sweet, since delicata squash is such a sweet flavor. This is more of a traditional soup recipe with a focus on the main vegetable, squash.

Yes, it’s simple to adapt this recipe to the slow cooker. Just sautee the onion and oil, then add all ingredients to your crock pot, and cook on low for a couple of hours, and puree with an immersion blender.

To make this recipe, you’ll need three delicata squash, plus onion.

Because it’s a vegan soup, it’s finished off with vegetable broth, almond milk (or another milk substitute), vegan butter, and salt and pepper.

How do you make delicata squash soup?

Making this soup is simple. Just roast the delicata squash in the oven.

Sautée onion in vegan butter until soft.

Scrape roasted squash off the skins with a spoon.

Add squash, onion, and butter to vegan broth and milk substitute.

Add salt and pepper to taste, and simmer on low.

Puree with a stick blender.

Serve with dollop of vegan sour cream or plain vegan yogurt. A sprinkle of vegan parmesan cheese is delicious as well. I absolutely love to garnish with a few pomegranate seeds for color and a pop of sweet/tart flavor.

This roasted delicata squash soup is creamy, and a lovely winter comfort food.

Ingredients

  • 3 delicata squash, halved lengthwise and seeded
  • 1 chopped onion, chopped
  • 3 cups vegan broth
  • 1 ½ cup milk substitute
  • 2 1/2 tablespoons vegan butter
  • salt and pepper to taste

Instructions

    1. Preheat oven to 325 degrees F. Place the squash, cut sides down, on parchment paper in a baking dish. Bake 35-40 minutes or until tender when poked with a fork. Cool.
    2. Melt butter in a large saucepan.
    3. Add onion and cook over low, stirring occasionally until onion is softened.
    4. Scrape the squash out of the flesh and add to onions. Add the stock and milk. Cook over medium-low heat, stirring occasionally, about 25 minutes.
    5. Using a hand blender, puree the soup in a blender. Season with salt and pepper to taste and serve.
